Wine dinner with Syncline Wines @ Registry Bistro6:00 pm – 9:00 pm
syn•cline ’sin-klīn n (1873) : a trough of stratified rock in which the beds dip toward each other from either side.
Syncline Wine Cellars is the family winery of Poppie and James Mantone. It is located along the Columbia River in southern Washington State. Directly west of the estate vineyard and winery is a series of 300-foot cliffs rising up into the surrounding mountains straight out of the Columbia River. Locally known as the “Coyote Wall Syncline” and to geologists as the “Bingen Syncline,” this dramatic feature gives the winery its name. It is at this point that the rainy western Columbia Gorge transitions to the semi-arid eastern Gorge.
Syncline’s general manager and co-owner Poppie will be with us for this wine dinner. Following seven years of world travel, university study and love for wine, Poppie moved to Oregon to become involved in the production of wine. She went on to work harvests at LaVelle, as well as in the vineyards of neighboring wineries and practiced Biodynamic farming at Wintergreen Farm, OR. Poppie and James met during a harvest at LaVelle Vineyards. Shortly after, they had fallen madly in love, married and began plans for a new endeavor: a winery of our own.

Our next wine dinner at Manhattan’s is coming up on Wednesday, May 22 at 6:30 P.M. This month we have chosen to showcase wines from Sonoma Valley and Chef has devised the following menu:
Course 1 – Benziger Cabernet Sauvignon, 2011 – Appetizer buffet including melon and prosciutto and sausage stuffed olives
Course 2 – Benziger Chardonnay, 2011 – Bleu cheese cheesecake in a bacon crust
Course 3 – Benziger Merlot, 2009 – Potato gnocchi with spinach and mushrooms
Course 4 – St. Francis Merlot, 2008 – Grilled tuna steaks with chorizo brown butter sauce and crispy kale
Course 5 – St. Francis “Old Vine” Zinfandel, 2009 – Chocolate crème brule in fillo
